At High we talk about 'Your 5 K's'... this is a playful way of reminding ourselves some the different types of fermented foods we can include into a varied vegcentric diet to support gut health. Each 'K' is delicious and complex it its own way and their flavour profiles help to foster a savoury palate. They are teaming with good bacteria, and are 'pre-digested', meaning carbohydrates have been turned into organic acids, phytic acid has been reduced (in the case of Kamut sourdough), and the nutrients are more bioavailable.
